Ingredients

Fish veloute                                                             500 ml

Picked shrimps                                                        100 g

Salt

Cayenne Pepper

Method

  1. Bring the fish veloute to the boil 
  2. Adjust the seasoning and consistency using the fish stock. 
  3. Pass through a fine strainer and add the shrimps.
