Madeira Sauce

500 MILLILITRES

Ingredients

Demi-glace                                                          500 ml

Madeira wine                                                      125 ml

Butter                                                                  50 g

Method

  1. Reduce the demi-glace by a quarter
  2. Remove it from the stove and add the wine.
  3. Adjust the consistency and the seasoning.
  4. Add the butter.
  5. Strain through a muslin cloth, keep hot but do not reboil.

Note:  This sauce is served with meat dishes.
