SALMON BUTTER

200 GRAMS

Ingredients

Cooked salmon                                                    100 g

Butter                                                                 100 g

Cayenne pepper

Method

  1. Pass the salmon through the fine sieve.
  2. Blend with the butter and seasoning.
  3. Pass the whole mixture through a fine sieve and use as required.

Note:  Used for cocktail savouries and for decorating cold salmon.
