DURHAM CUTLETS

10 PORTIONS

Ingredients

Potatoes (prepared)                                                  800 g

Beef (cooked)                                                          600 g

Onions                                                                     75 g

Parsley (chopped)                                                    15 g

Flour                                                                        50 g

Eggs                                                                         2

Breadcrumbs (white)                                                125 g

Piquant sauce                                                           250 ml

Salt

Pepper

Method

  1. Boil the potatoes, drain and mash them.
  2. Mince the beef through a fine plate and mix it with the potatoes.
  3. Peel the onions, cut them into fine dice and add them with the chopped parsley to the meat and potatoes.  Season with salt and pepper.
  4. Divide into 10 cutlets.
  5. Pass through flour, egg wash and breadcrumbs and deep fry in hot oil.
  6. Serve on a warm dish with a piquant sauce separately.
